Red Bulls vs Strikers preview. Copa Latina Continues.

Copa Latina continues this weekend!
The Copa Latina is South Florida’s premier amateur soccer tournament with clubs participating from all over the world, including Colombia, Argentina, Haiti, El Salvador, and many other Latin American and South American nations. Below is the schedule for this weekend’s upcoming matches:

The Fort Lauderdale Strikers will host the New York Red Bulls in its first preseason game

Today the Fort Lauderdale Strikers are set to take on the New York Red Bulls this at 2:30 P.M. in a friendly match that is open and free to the public.

It will be our first look at the Strikers who started their preseason this week. It is reported that a total of 36 players are in camp from which Head Coach Daryl Shore will select the best to stay with the team that hope to bring South Florida their first NASL Championship.
“I am very pleased that our organization, the New York Red Bulls, and Lockhart Stadium were all able to work out all the details involved with allowing the match to be open to the public. Even though we are only 5 days into preseason, it’s a great opportunity for our fans to see our team compete against one of the top teams in Major League Soccer. We hope all of our fans take advantage of this free exhibition match,” said Head Coach Daryl Shore.

The Red Bulls' roster includes former Barcelona star Thierry Henry and Mexican defender Rafa Marquez.

Copa Latina 2011

The Copa Latina is here! The Copa has launched a new website and Facebook page.

Miami, FL (FEBRUARY 18, 2011) – South Florida’s Copa Latina will be hosting its next ten matches of the first round this weekend with five matches each being played on Saturday and Sunday in Hialeah.

“The first weekend was a huge success, a lot of people came out to Ted Hendricks Stadium to support their respective teams and the energy was off the charts. I invite everyone to come this weekend and watch some of the stronger teams in our tournament,” said Copa Latina President, Tom Mulroy.

Copa Latina has also launched a brand new website with virtual features including game coverage, statistics, and Copa Latina history. They have also launched their own Facebook page where its fans can post information and photos as well.

Copa Latina 2010 Schedule Released, Miami FC Open tryouts this weekend

Copa Latina 2010 is here!
Official Release Follows:

Hialeah, FL (February 17, 2010). On Tuesday, February 16, 2010, El Nuevo Herald Copa Latina held its tournament draw at the Rusty Pelican restaurant in Key Biscayne. Using the same format as the World Cup Draw, all 32 teams selected to compete in this year's tournament were seeded, and the first-round schedule was announced.

The seventeenth edition Copa Latina saw some very interesting and competitive rivalries. As Tom Mulroy, President of Se Habla Fútbol, orchestrated the traditional draw of the teams, last year’s champions Honduras 5 Estrellas will open the tournament against Mexico Starlight. Other first round matches include Selección Hati vs. Colombia Atletico Jrs , Est. Del Guayas Ecuador vs. Unity Jamaica, and Haiti All-Stars vs. Sel. Cuba to name a few.

El Nuevo Herald Copa Latina is America's most prestigious adult soccer tournament, representing nearly 20 countries throughout Latin America and the Caribbean. Kickoff for Copa Latina 2010 is Saturday, March 6th, 2009 at 8 p.m., with opening ceremonies starting at 7:00 p.m. All games will be played at Ted Hendricks Stadium (Milander Park) in Hialeah.

Miami FC Hosts Fourth Annual Open Tryouts

Open tryouts will take place on February 20 and 21, at Weston Regional Park. On both days, the tryout will last from 9 A.M. to 2 P.M. with registration taking place from 8-8:30 A.M. For more information on Weston Regional Park, go HERE
Applicants can fill out their information (Name, age, contact information, legal status in the U.S., soccer experience, etc.) and pay to register at Miami FC’s 2010 Open Tryout Page.

NASL launch website, Traffic buys Copa Latina and Enchilada recipes by Burrito

Whoever thought this off season would be so exciting? Ay chihuahua! So much going on that Burrito don't know where to start... Ok, Burrito going to put down his chew toy and start with the North American Soccer League.

Miami FC owners Traffic Sports have bought Copa Latina and its parent company "Se Habla Futbol". That is so good cause Burrito Habla Futbol too! For you people that don't know the Copa Latina started in 1993 and over 20,000 spectators attended the inaugural tournament. Many great players have played in the tournament like George Weah, one time Miami Fusion and Miami FC player Diego Serna, just to name a few. And now as Burrito promise... an Enchilada recipe!

Cheese Enchiladas Recipe

Ingredients
2 Cups shredded Monterrey Jack cheese (8 oz)
1 Cup shredded Cheddar cheese (4 oz)
1 Med. onion, chopped (about 1/2 cup)
1/2 Cup sour cream or plain yogurt
2 Tablespoons chopped fresh parsley
1/4 Teaspoon pepper
6 Flour tortillas (7-inch diameter)
1 Can (15 oz) tomato sauce
1/3 Cup chopped green bell pepper
1 Tablespoon chili powder
1 Teaspoon chopped fresh or
1/2 Teaspoon dried oregano leaves
1/4 Teaspoon ground cumin
1 Clove garlic, finely chopped
1/4 Cup shredded Cheddar cheese (1 oz)

Directions
Heat oven to 350 d. Grease rectangular baking dish, 12 X 7 1/2 X 2 in. Mix Monterrey Jack cheese, 1 cup Cheddar cheese, the onion, sour cream, parsley and pepper. Spoon about 1/2 cup cheese mixture onto each tortilla. Roll tortilla around filling and place seam side down in dish. Mix remaining ingredients except 1/4 cup Cheddar cheese. Pour over enchiladas. Sprinkle with 1/4 cup Cheddar cheese. Bake uncovered about 20 minutes or until hot and bubbly. Garnish with sour cream and sliced black olives or lime wedges if desired. 6 servings: 360 calories per serving.

To Microwave: Prepare as directed – except place enchiladas in greased rectangular microwavable dish, same size as above, and do not sprinkle with 1/4 cup Cheddar cheese. Cover with waxed paper and microwave on high 9 to 11 minutes, rotating dish 1/2 turn after 5 minutes, until hot and bubbly. Sprinkle with 1/4 cup Cheddar cheese. Cover and let stand about 3 minutes.
